Behind the Scenes: 7Acre at Home

7Acre BarnGrill is temporarily closed due to the COVID-19 pandemic. However, the people have spoken, and they simply cannot live without their favorite restaurant, so we decided to bring 7Acre to them! On April 1, we published the debut episode of the new video series, How to 7Acre at Home with Chef and Baker.

Our team was granted exclusive access to film where the magic happens! Practicing extreme caution, we shot all of the footage in a single day. Kelsey worked her filmmaking magic (as usual), and Lisa documented the project with photos behind the scenes.

In the premier episode, watch and learn as Megan, the 7Acre Baker, teaches you how to recreate their famous, flaky pie crust at home. Her professional pie-making wisdom is unmatched in tips and tricks, such as how to prevent your dough from crumbling, and how to ensure ultimate butteriness. Watch the first episode below:

INGREDIENTS:

  • 15 oz. flour

  • 8 oz. butter

  • 3 oz. shortening

  • 1/4 tsp. baking powder

  • 1 tsp. salt

  • 1 Tbsp. sugar

  • 2 tsp. apple cider vinegar

  • 3.8 oz. water

DIRECTIONS:

  1. Cut the 8 oz of butter in to small cubes and store in the fridge until ready.

  2. Combine flour, salt, sugar, baking powder in bowl of the food processor. Pulse to combine. Put in the shortening and pulse 5-6 times

  3. Add the cold butter and pulse until there are no large pieces of butter left. You want it to feel crumbly with butter pieces no larger than the size of a pea.

  4. Make sure your water is cold, taken directly from the fridge if possible. You can add ice to cool it down but make sure to remove before adding to the pie.

  5. Combine the water and 2 tsp of apple cider. Pour into the food processor and pulse a few times until the mixture resembles cottage cheese.

  6. Pour the pie dough onto a floured, working surface.

  7. Combine the dough together to make one ball – working it as little as possible – to bring it all together.

  8. Cut the large ball in half and form your two balls into discs.

  9. Wrap the disc in plastic wrap and smooth out the cracks with the palm of your hand.

  10. Flip the disk over and smooth the other side while also running your hand around the outside to smooth the edges. This will make it easier to roll out later.

  11. Store in the refrigerator for 2 hours or up to 5 days, OR in your freezer for 1+ month.
